Whenever I start craving healthier food and make plans to cook a little more often, I usually zero in on about 1-3 key ingredients to start building meals around. Right now my focus is on tomatoes, so I found a few recipes I want to test out. We already know the health benefits (heart healthy, rich source of vitamins A,C, and other antioxidants that help protect theskin against sun damage,keeping it looking youthful), and they can seriously work in almost any meal.
Cherry tomatoes are my absolute fave (slice, drizzle them with EVOO + a little sea salt and ground black pepper before roasting for about 10 min for a quick snack), so I’m wanting meals that won’t take all day to prepare. My usual spinach, tomato, and chicken pasta still works in a pinch, but I need more to choose from.
My mouth was watering just reading the recipes.
