Being someone that’s always on the go means 1 of 2 things: 1.) You spend WAY too much money on food 2.) When you do cook, you try to make quick, delicious meals. I find myself somewhere in the middle. I keep it relatively healthy 90% of the time if I eat out (fresh cold-pressed juices, wraps, and salads), and when I’m in cooking mode (aka my wallet is screaming “Chill Out!”), I have a few go-to meals that I make. I made a conscious lifestyle change last year, so I try to keep my fridge stocked with lean meats or fish, whole wheat pasta, veggies (fresh + frozen) and fruit so that at any given moment I can cook something that won’t give me the itis, but I still spend countless hours searching Pinterest for fresh new recipes to try.
A few that have been added to my Summer meal list:
Nectarine, Avocado + Spinach Spring RollsKale Caesar Pasta SaladChia Seed + Granola Individual Breakfast Pots
Toasted Bagel with Dill Cream Cheese + Avocado
Spicy Shrimp with Cauliflower Mash + Garlic Kale
There are a few soups that I want to try as well. Being more health conscious at home is a lot easier than people think. If you’re open to different tastes/ingredient combinations and seasoning, there are so many recipes out there that you can whip up in 25 minutes or less that are healthy but taste great, so you won’t feel deprived.
