I will always be the girl that wants to go for pancakes, but that indulgence isn’t always good for the waistline. Enter: 2 ingredient pancakes. They’re a naturally sweet treat that’s full of protein, and are deliciously easy to make. This recipe is seriously only 2 ingredients, and takes less than 5 minutes (so on those days you’re in a rush but don’t want oatmeal, you can do this instead). They’re also a little bit lighter than traditional pancakes but definitely satisfy that craving.
Ingredients:
2 eggs
1 banana, chopped
Directions
Whisk eggs in a bowl, then add in the banana and mash together to make a batter (make it smooth, but a few lumps are ok).
Heat 1 tablespoon of oil or butter in a frying pan on medium heat, then *pour in the batter to create a thin pancake. Cook til you start seeing little bubbles form, then flip on the other side. *They’re easier to manipulate if you keep them small.
Serve with your favorite toppings (I chose fresh blueberries + a touch of maple syrup. Not pictured, turkey bacon). Also try: fresh strawberries w/whipped cream, mixed berries w/vanilla yogurt, or add a dash of cinnamon or brown sugar to the mix for a little bite.
