When the temps start to change and get warmer, it’s natural to want to eat a little bit lighter. I eat relatively healthy now (sweets are my downfall!), but when I don’t feel particularly inspired with meal prep + planning, I can eat the same thing every day (and be totally fine with it). I want to experiment a bit more in the kitchen, though, so I’ve been looking for simple dishes that I can easily make on those days when I’m working from home (and/or being budget conscious because lord knows all of my extra money goes to makeup and meals if I’m not being careful, lol).
I love bright, colorful meals that are easy to make, taste delicious and filled with veggies, so here are 6 healthy recipes that are perfect to try this Spring.
Pita Tostadas with Butternut Squash Black Beans + Avocado
Avocado Kale Caesar Salad + Sweet Potato Fries
Easy Chicken Gyros + Tzatziki Sauce
