I’m not a vegetarian but I am a self-proclaimed foodie, so I love trying different types of food. I’ve enjoyed a home-cooked dinner with Justin + Amy (The Chubby Vegetarian) and absolutely loved the meal, so I was thrilled to learn that they were releasing a 3rd cookbook this Spring, this time focused on Low-Carb Recipes!
Low-Carb Vegetarian Cookbook: 100 Easy Recipes and a Kick-Start Meal Plan is 100% vegetarian and designed to help you stay carb-conscious while exploring new dishes (without sacrificing flavor). It’s a creative cookbook that features recipes like Tofu Hot Wings With Yogurt Ranch Dressing, Cinnamon Toast Souffle, and Bibimbap, so it’s real meals that you can easily create at home and incorporate into your diet (or use to help you make the switch).

One of the issues that I’ve found that most people have when it comes to adopting a more plant-based diet are the perceived restrictions and lack of variety in vegan and vegetarian meals-they assume the dishes must be basic or bland when that’s not the case at all. The more open your palette is when it comes to different foods and flavors, the more you will be able to enjoy these “alternative” meals. Even if the goal isn’t to become vegan or vegetarian, the recipes included can help put some variety back into your meals at home.
