Having gratitude for the small things in life are so important (especially right now), so I wanted to start sharing little things that I'm loving lately.
When Summer arrives, I naturally find myself gravitating towards lighter fare. Fresh fruit, smoothies and salads become staples, and lately I've been making this Peach Salad with Balsamic Glaze on the days I'm hungry but don't want anything too heavy.
I'm not one for outdoor activities (I stopped looking forward to Summer once I became an adult and no longer enjoyed Summer breaks, lol), but a picnic in the park? Sign me up.
The beauty of this flatbread recipe is that you probably already have most of these ingredients in your fridge and pantry, and depending on the flavor palette that you want to create, you can mix things up and still create something yummy in 10 minutes.

So we got the word that Memphis is going to start back "opening up" officially next week, and while I'm still going to eeeease into going back to my pre-covid 19 schedule, I am looking forward to life eventually going back to normal (whatever that may be) again.
